Week 1 – Dinner 4: Teriyaki Chicken / Bok Choy / Rice Krispy Treats

Teriyaki Chicken: The recipe:

Chicken (My Person had drumsticks this time)
Soy Vay Veri Veri Teriyaki Marinade

  1. Marinate chicken in marinade overnight or for a few hours (My Person puts the chicken and marinade in ziploc bags in the morning to marinate until dinnertime)
  2. Preheat oven to 400 degrees
  3. Bake chicken until done; occasionally brush on more marinade (about 25 minutes)

Boy Choy: The recipe:

Chicken broth
Boy Choy
Salt

  1. Cut stems off bok choy
  2. Bring broth to a boil
  3. Add salt and boy choy; reduce heat to medium and simmer
  4. Cook until boy choy is tender
  5. Drain and serve

Tonight, instead of eating the chicken, bok choy, rice meal with Other Person, My Person made some rice krispy treats and had that for dinner.  She is a human adult so she can do that.

Rice Krispy Treats: The recipe:

1/8 stick of butter
Half back of mini marshmallows
Rice Krispies

  1. Melt butter in pot
  2. Add marshmallows, reduce to medium heat.  Cook until melted
  3. Remove pot from heat source.  Add rice krispies (usually about 2:1 to the marshmallows, but depends on how you like it)
